Tacos De Frijol

Ingredients

  • 2 cups cooked pervuian or pinto beans
  • 1/2 cup vegetable broth
  • 1/2 an onion
  • 1 tbsp canola oil
  • 1 tsp garlic
  • 1 tbsp soyrizo (optional)
  • Salt and pepper to taste

Preparation

  1. Dice onion

  2. Place a large pan on medium/high heat and add your oil, soyrizo and diced onion

  3. Sauté onions for about 3 minutes and then add beans to the pan

  4. Add vegetable broth to pan and then turn heat down to a simmer when it starts boiling

  5. Begin mashing the beans with the back of spatula until you achieve your desired consistency

  6. You may also add less/more vegetable broth depending on how you like your beans

  7. I personally don’t mash them all the way and like some whole beans in there to add texture
