Tacos De Frijol
Ingredients
- 2 cups cooked pervuian or pinto beans
- 1/2 cup vegetable broth
- 1/2 an onion
- 1 tbsp canola oil
- 1 tsp garlic
- 1 tbsp soyrizo (optional)
- Salt and pepper to taste
Preparation
Dice onion
Place a large pan on medium/high heat and add your oil, soyrizo and diced onion
Sauté onions for about 3 minutes and then add beans to the pan
Add vegetable broth to pan and then turn heat down to a simmer when it starts boiling
Begin mashing the beans with the back of spatula until you achieve your desired consistency
You may also add less/more vegetable broth depending on how you like your beans
I personally don’t mash them all the way and like some whole beans in there to add texture
