Fully Loaded Breakfast Tacos

Ingredients

  • 1 block of firm tofu, rinsed & crumbled
  • 1 tbsp olive or avocado oil
  • 1 bell pepper, chopped small
  • 1/2 medium onion, chopped small
  • 2 garlic cloves, minced
  • 1 handful of spinach, chopped
  • 1/4 cup salsa
  • 1 can black beans, rinsed & drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp turmeric
  • a pinch of salt & pepper
  • 10 taco shells
  • avocado
  • salasa
  • dairy-free cheese
  • fresh chopped cilantro

Preparation

  1. Start by heating oil over medium heat in a large skillet

  2. Sauté onions & pepper until soft (about 5 mins)

  3. Add garlic, crumbled tofu and spices

  4. Let cook for 10 minutes stirring often until water has been evaporated from tofu

  5. Add beans, salsa, spinach and cook for an additional 3 minutes

  6. Load taco shells with mixture and toppings of choice!
