Easy Vegan Tofu Scramble Breakfast
Ingredients
- 200g firm tofu
- 1 tbsp olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/4 tsp paprika
- Salt and pepper to taste
- Handful of spinach
Toppings
- avocado (optional)
- cherry tomatoes (optional)
- parsley (optional)
Preparation
Crumble the tofu with your hands or a fork until it resembles scrambled eggs
Heat olive oil in a skillet over medium heat
Sauté diced onion and bell pepper until softened
Add minced garlic, turmeric, cumin, and paprika and cook until fragrant
Stir in the crumbled tofu and cook until heated through
Season with salt and pepper to taste
Stir in spinach and cook until wilted
Serve immediately with optional toppings
