Vegan Tofu Scramble Toast

Ingredients

  • 2 slices of bread
  • 2 tbsp of vegan butter or margarine
  • 2 cloves of garlic
  • 100g of tofu
  • 1/2 tsp of turmeric
  • A pinch of salt and pepper
  • 1/3 tsp of oregano
  • 1 tbsp of coconut milk
  • 1 tbsp of parsley
  • 1 avocado
  • 1 tomato
  • A pinch of chili pepper

Preparation

  1. Butter the bread slices and toast them until golden brown

  2. In a skillet, melt a portion of the vegan butter and sauté the garlic until fragrant

  3. Crumble the tofu and add it to the skillet with turmeric, salt, pepper, oregano, and chili pepper, cooking until heated through

  4. Stir in the coconut milk and parsley, and continue cooking until well combined

  5. Slice the avocado and tomato

  6. Assemble by placing the tofu mixture on the toasted bread and topping with avocado and tomato slices
