Butter Bean Scramble Breakfast Bowl
Ingredients
Butter bean scramble
- 1 x tin butter beans, drained & rinsed
- 2 tablespoons non-dairy milk
- Handful of spring onions, chopped
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 tablespoon nutritional yeast
- 1 teaspoon olive oil (for cooking)
To serve
- Toast
- Cherry tomatoes
- Handful of cilantro minced
- Avocado
- Sesame seeds
Preparation
In a bowl, add the drained butter beans. Mix in the garlic powder, turmeric, salt. Add in the milk. Then mash with a fork, leaving some chunks
Stir the spring onions through the mix
Heat a pan over medium heat with a drizzle of olive oil. Add in the butter bean mix and sauté for about 8-10 minutes until slightly caramelised and fragrant
Assemble the breakfast bowl: Add in some chopped cherry tomatoes and slices of toast. Top with the butter bean scramble, avocado slices, sesame seeds and optional sprinkle of spring onions
Notes
This scramble is high in protein and fiber, making it a great alternative to tofu scrambles
