Vegan Black Bean Tacos with Avocado
Ingredients
- 1 cup black beans
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 4 small tortillas
- 1 avocado, sliced
- 1/4 cup salsa
- Cilantro, for garnish
Preparation
Heat olive oil in a skillet over medium heat
Sauté onion and bell pepper until softened
Add garlic, chili powder, cumin, paprika, salt and pepper; cook for 1 minute
Stir in black beans and cook until heated through
Warm tortillas in a separate pan or microwave
Fill tortillas with bean mixture
Top with avocado slices, salsa, and cilantro
