Vegan Black Bean Tacos with Avocado

Ingredients

  • 1 cup black beans
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 4 small tortillas
  • 1 avocado, sliced
  • 1/4 cup salsa
  • Cilantro, for garnish

Preparation

  1. Heat olive oil in a skillet over medium heat

  2. Sauté onion and bell pepper until softened

  3. Add garlic, chili powder, cumin, paprika, salt and pepper; cook for 1 minute

  4. Stir in black beans and cook until heated through

  5. Warm tortillas in a separate pan or microwave

  6. Fill tortillas with bean mixture

  7. Top with avocado slices, salsa, and cilantro
