Seasoned Veggie Tacos with Broccoli and Avocado
Ingredients
- tortillas
- black beans
- yellow bell pepper
- broccoli
- red onion
- chili
- garlic
- paprika
- cumin
- salt and pepper
- pumpkin seeds
- avocado
- hot sauce
Preparation
Rinse black beans and add to pan with extra virgin olive oil.
Cut up veggies and thinly slice red onion, then add them with seasoning to the pan. Toss it around and let it fry on medium-low heat.
Once broccoli is softened and beans are charred, it’s done.
Add the mix to tortillas with avocado chunks, pumpkin seeds, and hot sauce or salsa of choice.
