Vegan Walnut Meat Tacos

Ingredients

  • 1 cup walnuts
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup red onion
  • 2 cloves garlic
  • 1 tablespoon soy sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 small tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup diced avocado
  • 1/4 cup chopped cilantro
  • 1/4 cup vegan sour cream or cashew cream

Preparation

  1. In a food processor, pulse the walnuts, sun-dried tomatoes, red onion, and garlic until crumbly

  2. In a bowl, mix the walnut mixture with soy sauce, chili powder, cumin, smoked paprika, salt, and black pepper

  3. Heat olive oil in a skillet over medium heat and cook the walnut mixture for 5-7 minutes until heated through and fragrant

  4. Warm the tortillas in a dry skillet or microwave

  5. Assemble the tacos by filling each tortilla with the walnut meat mixture and topping with shredded lettuce, diced tomatoes, diced avocado, chopped cilantro, and vegan sour cream or cashew cream
