Vegan Black Bean Quinoa Burger
Ingredients
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
Preparation
Mix the ground flaxseed with water and let it sit for 5 minutes to form a flax egg.
Mash the black beans in a bowl using a fork or masher.
Add the cooked quinoa, bread crumbs, chopped onion, minced garlic, flax egg, soy sauce, smoked paprika, cumin, black pepper, and salt. Stir until well combined.
Shape the mixture into burger patties.
Heat olive oil in a skillet over medium heat and cook the patties for 4-5 minutes per side until golden and firm.
