Vegan Jackfruit Pulled Chicken Sandwich
Ingredients
- 2 cans young green jackfruit in brine
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- Salt to taste
- 4 whole wheat hamburger buns
For serving
- Pickles
- Coleslaw
Preparation
Drain and rinse the jackfruit, then shred it to resemble pulled meat.
Heat olive oil in a skillet over medium heat.
Add diced onion and minced garlic, and sauté until softened and fragrant.
Stir in smoked paprika, chili powder, cumin, black pepper, and salt to taste.
Add the shredded jackfruit to the skillet and cook until it begins to brown.
Pour in the BBQ sauce and simmer for 10-15 minutes until the mixture is well-coated and heated through.
Toast the hamburger buns if desired for added crispness.
Assemble the sandwiches by placing the jackfruit mixture on the buns and topping with pickles and coleslaw.
