Vegan Pulled Jackfruit Sandwich

Ingredients

  • 1 can drained and washed jackfruit
  • 1 thinly sliced onion
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2 teaspoons cumin powder
  • 3 teaspoons smoked paprika
  • 1 tablespoon mixed dried herbs
  • 1/2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon xylitol
  • Salt to taste
  • 1 tablespoon vegan butter

Preparation

  1. Heat olive oil in a pan and when hot, add bay leaf, onions, xylitol, and lemon. Cook until onions are caramelized.

  2. Add tomato paste, cumin powder, and smoked paprika. Cook for a further 5-6 minutes.

  3. Add jackfruit and herbs and mix well to combine.

  4. Stir in vegan butter and salt. Cook on a low flame with lid on for 20-25 minutes until jackfruit is soft and melts in the mouth.

  5. Eat on its own or in a sandwich. Enjoy!
