Vegan Pulled Jackfruit Sandwich
Ingredients
- 1 can drained and washed jackfruit
- 1 thinly sliced onion
- 1 tablespoon tomato paste
- 1 bay leaf
- 2 teaspoons cumin powder
- 3 teaspoons smoked paprika
- 1 tablespoon mixed dried herbs
- 1/2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon xylitol
- Salt to taste
- 1 tablespoon vegan butter
Preparation
Heat olive oil in a pan and when hot, add bay leaf, onions, xylitol, and lemon. Cook until onions are caramelized.
Add tomato paste, cumin powder, and smoked paprika. Cook for a further 5-6 minutes.
Add jackfruit and herbs and mix well to combine.
Stir in vegan butter and salt. Cook on a low flame with lid on for 20-25 minutes until jackfruit is soft and melts in the mouth.
Eat on its own or in a sandwich. Enjoy!
