Simple Vegan Bbq Pulled Jackfruit

Ingredients

  • 2 cans of young green jackfruit in water or brine
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of BBQ sauce
  • 1 tablespoon of olive oil
  • 1 tablespoon of maple syrup
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin
  • Salt and pepper, to taste

Preparation

  1. Drain and rinse the jackfruit, then shred it into pieces.

  2. Heat olive oil in a skillet over medium heat.

  3. Add chopped onion and minced garlic, sauté until softened.

  4. Stir in smoked paprika, cumin, salt, and pepper.

  5. Add the shredded jackfruit and cook for a few minutes.

  6. Pour in the BBQ sauce and maple syrup, stir to combine.

  7. Simmer until the jackfruit is tender and flavors are blended, about 10-15 minutes.

  8. Serve as desired, such as in sandwiches, tacos, or wraps.
