Simple Vegan Bbq Pulled Jackfruit
Ingredients
- 2 cans of young green jackfruit in water or brine
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup of BBQ sauce
- 1 tablespoon of olive oil
- 1 tablespoon of maple syrup
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of cumin
- Salt and pepper, to taste
Preparation
Drain and rinse the jackfruit, then shred it into pieces.
Heat olive oil in a skillet over medium heat.
Add chopped onion and minced garlic, sauté until softened.
Stir in smoked paprika, cumin, salt, and pepper.
Add the shredded jackfruit and cook for a few minutes.
Pour in the BBQ sauce and maple syrup, stir to combine.
Simmer until the jackfruit is tender and flavors are blended, about 10-15 minutes.
Serve as desired, such as in sandwiches, tacos, or wraps.
