Grilled Cauliflower Steaks with Pesto

Ingredients

Basil cilantro pesto

  • 2 cups of fresh basil
  • 2 cups of cilantro
  • 3 garlic cloves
  • 6 tbs of olive oil
  • Zest of 1 lime
  • Juice of 2 limes
  • Salt/pepper to taste

Cauliflower steaks

  • 2 cauliflower heads
  • 1tsp of ginger power
  • 1/2 tsp of fennel
  • 1/2 tsp of cayenne
  • 2 tbs of cooking oil
  • Salt/pepper to taste

Preparation

Basil cilantro pesto

  1. In a blender, add all your ingredients.

  2. Pulse until nicely mixed, but make sure not to over blend.

  3. Set aside

Cauliflower steaks

  1. In a pot, boil and cook cauliflower for 10 mins on medium low.

  2. While cauliflower is cooking, add the rest of your ingredients in a pestle and mortar.

  3. Grind until the fennel seeds are fully crushed.

  4. Once cauliflower is cooked, slice in order to get your “steaks”.

  5. Coat your cauliflower on both sides.

  6. On your BBQ grill, cook for 15 minutes on each side. If you don’t have a BBQ, you can place them in the oven - just as yummy!

  7. Enjoy with your Basil Cilantro Pesto or your favorite hot sauce!

Tips

  1. This recipe is vegan and can be adapted for oven cooking if a grill is unavailable.
