Baked Acorns with Pesto Orzo

Ingredients

  • 2 acorns, cut in half
  • 3 jalapeños, deseeded
  • 1 cup cilantro
  • 4 tablespoons olive oil
  • 1-2 tablespoons water
  • Juice of 1 lime
  • Half a small onion
  • Garlic
  • Salt and pepper to taste
  • 3 cups orzo, cooked
  • 3 cups spinach
  • Pine nuts for garnish
  • Bell peppers for garnish

Preparation

  1. Preheat oven to 425F.

  2. Add the acorn to a lined baking sheet.

  3. Drizzle olive oil and sprinkle salt and pepper.

  4. Bake for 15 minutes.

  5. Meanwhile, add jalapeños, cilantro, olive oil, lime juice, water, onion, salt, pepper, and garlic to a blender and blend until smooth.

  6. In a pot, combine the homemade pesto with the cooked orzo.

  7. Cook for 10 minutes.

  8. Add spinach to the pot of orzo before serving.

  9. Place the orzo on top of the baked acorns.

  10. Garnish with roasted pine nuts and bell peppers.

  11. Enjoy.
