Baked Acorns with Pesto Orzo

Ingredients

  • 2 acorns, cut in half
  • 3 jalapeños, deseeded
  • 1 cup of cilantro
  • 4 tbs of olive oil
  • 1-2 tbs of water
  • Juice of 1 lime
  • Half a small onion
  • 3 cups of orzo, cooked
  • 3 cups of spinach

Preparation

  1. Preheat oven to 425F

  2. Add your acorn to your lined baking sheet

  3. Drizzle olive oil and sprinkle salt and pepper

  4. Bake for 15 minutes

  5. Meanwhile, add jalapeños, cilantro, olive oil, lime, water, onion, salt, pepper and garlic to blender and blend till smooth

  6. In a pot, add your homemade pesto with your cooked orzo

  7. Cook for 10 minutes

  8. Add spinach to the pot of orzo before serving

  9. Add your orzo on top of your baked acorns

  10. Garnish with roasted pine nuts and bell peppers

  11. Enjoy
