Chickpea Penne with Tomato Ricotta Sauce

Ingredients

  • @eatbanza chickpea penne
  • Cherry tomatoes
  • Mushrooms
  • Spinach
  • @kitehillfoods ricotta
  • Olive oil
  • Salt & pepper

Preparation

  1. Place cherry tomatoes in a baking dish and drizzle with a generous amount of olive oil

  2. Bake in the oven at 400 degrees for 30 to 40 minutes, moving them around halfway through

  3. Cook pasta and once done, drain and reserve about 1/3 cup of the pasta water

  4. Heat mushrooms on a pan with a splash of water and the top on to steam them

  5. Lower the heat to warm and add in the pasta and tomatoes, including the juice in the baking dish

  6. Add spoonfuls of ricotta and some spinach and mix it all together

  7. Sprinkle with salt and pepper once done
