Cheesy Penne with Tomatoes and Greens
Ingredients
- chickpea penne
- cherry tomatoes
- spinach
- onions
- broccoli
- plant-based ricotta
- olive oil
- minced garlic
- salt and pepper
Preparation
Steam cherry tomatoes, onion, and spinach in a pan with a splash of water until tender, then add olive oil and minced garlic and sauté.
Cook the pasta according to package instructions, then drain and reserve about 1/3 to 1/2 cup of the pasta water.
Add the cooked penne to the pan with the other ingredients and lower the heat to a simmer.
Stir in the plant-based ricotta and add the reserved pasta water a little at a time until the desired consistency is reached, then drizzle with olive oil and season with salt and pepper.
