Gnocchi Mushroom and Avocado Bowl

Ingredients

  • Gnocchi (e.g., Trader Joe's cauliflower gnocchi)
  • Mushrooms
  • Onion
  • Cherry tomatoes
  • Spinach
  • Avocado
  • Olive oil
  • Garlic powder

Preparation

  1. Cook the gnocchi stovetop in olive oil, skipping the nutritional yeast step if following a referenced method.

  2. Place cherry tomatoes in a baking dish, drizzle with olive oil, and bake at 400°F for 30 to 40 minutes, stirring halfway through.

  3. Chop the onion and steam it with the mushrooms in a pan with a splash of water until tender.

  4. Add olive oil and garlic powder to the pan and sauté the mixture.

  5. Add spinach to the pan once the other vegetables are done, as it cooks very quickly.

  6. Serve all components together with mashed avocado.

Notes

  1. Cauliflower gnocchi from Trader Joe's is vegan and can be substituted for other gnocchi types.
