Vegan Avocado Mushroom Gnocchi Bowl

Ingredients

  • Gnocchi
  • Mushrooms
  • Onion
  • Cherry tomatoes
  • Spinach
  • Avocado
  • Olive oil
  • Garlic powder

Preparation

  1. Cook gnocchi in olive oil on the stovetop until golden, skipping any nutritional yeast step

  2. Place cherry tomatoes in a baking dish, drizzle with olive oil, and bake at 400°F for 30-40 minutes, stirring halfway

  3. Chop the onion and mushrooms, then steam in a pan with a splash of water until tender

  4. Add olive oil and garlic powder to the pan, and sauté the onion and mushrooms

  5. Add spinach and cook until just wilted

  6. Mash the avocado and serve on top of the gnocchi, mushrooms, and tomatoes

Tips

  1. Trader Joe's cauliflower gnocchi is vegan and can be used as a substitute for regular gnocchi
