Baked Acorns with Pesto Orzo

Ingredients

  • 2 acorns, cut in half
  • 3 jalapeños, deseeded
  • 1 cup cilantro
  • 4 tablespoons olive oil
  • 1-2 tablespoons water
  • Juice of 1 lime
  • 1/2 small onion
  • 3 cups cooked orzo
  • 3 cups spinach
  • Garlic, to taste
  • Salt and pepper, to taste
  • Pine nuts, for garnish
  • Bell peppers, for garnish

Preparation

  1. Preheat oven to 425F

  2. Add your acorns to your lined baking sheet

  3. Drizzle olive oil and sprinkle salt and pepper

  4. Bake for 15 minutes

  5. Meanwhile, add jalapeños, cilantro, olive oil, lime juice, water, onion, salt, pepper, and garlic to a blender and blend until smooth

  6. In a pot, add your homemade pesto with your cooked orzo

  7. Cook for 10 minutes

  8. Add spinach to the pot of orzo before serving

  9. Add your orzo on top of your baked acorns

  10. Garnish with roasted pine nuts and bell peppers

  11. Enjoy
