White Bean Hummus Pasta

Ingredients

  • olive oil
  • chili flakes
  • onion
  • garlic cloves
  • rapini
  • cherry tomatoes
  • spinach
  • pasta
  • prepared white bean hummus
  • salt and pepper to taste
  • pasta water as needed

White bean hummus

  • 2 cups cooked cannellini beans
  • 5 tablespoons tahini
  • 3 small cloves garlic
  • 7 tablespoons olive oil
  • juice from one lemon
  • 1/4 teaspoon cumin
  • 1 teaspoon salt
  • cracked pepper to taste
  • 1/2 cup warm water

Preparation

  1. Start a pan with olive oil, chili flakes, onion, and garlic.

  2. Chop rapini and add it to the pan.

  3. Add cherry tomatoes and spinach, then toss cooked pasta in the pan.

  4. Reserve pasta water to thin the sauce if needed.

  5. Add two large spoonfuls of prepared white bean hummus and thin it with pasta water.

  6. Toss everything together and transfer to a bowl.

  7. Season generously with salt and pepper.

Making hummus

  1. Add all ingredients to a food processor except the water and begin mixing.

  2. Add a quarter cup of water and continue mixing, stopping to scrape down the sides as necessary.

  3. Taste and adjust seasoning for salt, lemon, and pepper.

  4. Add more water if the texture is too dry to achieve a creamy consistency.

  5. Once creamy, scrape the hummus from the food processor bowl.

Tips

  1. A little extra water in the hummus won't hurt, but too little can make it gummy.

  2. This dish is easy and delicious, perfect for a quick meal.
