Creamy Sun-Dried Tomato Hummus Pasta

Ingredients

  • Pasta
  • A little olive oil
  • 1 medium onion
  • 7 sun-dried tomatoes (oil-packed)
  • 2 garlic cloves
  • 1 cup hummus
  • Pasta cooking water (reserve 2 cups)
  • Salt to taste
  • Red chili flakes (optional)

Preparation

  1. Cook pasta according to package directions, drain, and reserve 2 cups of pasta cooking water.

  2. Sauté 1 medium onion sliced in a little olive oil for about 5 minutes.

  3. Add 7 roughly chopped sun-dried tomatoes and sauté for a few more minutes.

  4. Add 2 sliced garlic cloves and cook for another 30 seconds.

  5. Add 1 cup hummus and 1/2 cup of the reserved pasta cooking water, stir, and cook on low heat for a few more minutes.

  6. Optionally, blend the mixture until smooth, adding more pasta water as needed, then return to the saucepan.

  7. Stir in the desired amount of cooked pasta, adding more pasta water as needed to achieve the desired consistency.

  8. Season with salt to taste.

  9. Top with red chili flakes before serving.
