Grilled Cauliflower Steaks with Basil Cilantro Pesto
Ingredients
Basil cilantro pesto
- 2 cups of fresh basil
- 2 cups of cilantro
- 3 garlic cloves
- 6 tablespoons of olive oil
- Zest of 1 lime
- Juice of 2 limes
- Salt and pepper to taste
Cauliflower steaks
- 2 cauliflower heads
- 1 teaspoon of ginger powder
- 1/2 teaspoon of fennel
- 1/2 teaspoon of cayenne
- 2 tablespoons of cooking oil
- Salt and pepper to taste
Preparation
Basil cilantro pesto
In a blender, add all your ingredients.
Pulse until nicely mixed, but make sure not to over blend.
Set aside
Cauliflower steaks
In a pot, boil and cook cauliflower for 10 minutes on medium low.
While cauliflower is cooking, add the rest of your ingredients in a pestle and mortar.
Grind until the fennel seeds are fully crushed.
Once cauliflower is cooked, slice in order to get your steaks.
Coat your cauliflower on both sides.
On your BBQ grill, cook for 15 minutes on each side. If you don’t have a BBQ, you can place them in the oven - just as yummy.
