Grilled Cauliflower Steaks with Basil Cilantro Pesto

Ingredients

Basil cilantro pesto

  • 2 cups of fresh basil
  • 2 cups of cilantro
  • 3 garlic cloves
  • 6 tbs of olive oil
  • Zest of 1 lime
  • Juice of 2 limes
  • Salt/pepper to taste

Cauliflower steaks

  • 2 cauliflower heads
  • 1 tsp of ginger powder
  • 1/2 tsp of fennel
  • 1/2 tsp of cayenne
  • 2 tbs of cooking oil
  • Salt/pepper to taste

Preparation

  1. In a blender, add all your ingredients for the pesto.

  2. Pulse until nicely mixed, but make sure not to over blend.

  3. Set the pesto aside.

  4. In a pot, boil and cook cauliflower for 10 minutes on medium low.

  5. While cauliflower is cooking, add the rest of your ingredients in a pestle and mortar.

  6. Grind until the fennel seeds are fully crushed.

  7. Once cauliflower is cooked, slice in order to get your steaks.

  8. Coat your cauliflower on both sides.

  9. On your BBQ grill, cook for 15 minutes on each side, or place them in the oven if you don’t have a BBQ.

  10. Enjoy with your Basil Cilantro Pesto or your favorite hot sauce.
