Fall Fresh Poblano Corn Salad
Ingredients
- 1 cup of poblano pepper, chopped
- 1 1/2 cups of cucumber, chopped
- 1/2 cup of red onions, chopped
- 1/2 cup of cilantro, chopped
- 1 cup of tomatoes, chopped
- 2 cups of corn, sautéed
- Juice of 1 lime
- 2 tablespoons of olive oil
- Salt and pepper to taste
Preparation
Sauté the corn until lightly cooked or as desired.
Add all of the ingredients to a mixing bowl.
Mix until well combined.
