Fall Fresh Poblano Corn Salad

Ingredients

  • 1 cup of poblano pepper, chopped
  • 1 1/2 cups of cucumber, chopped
  • 1/2 cup of red onions, chopped
  • 1/2 cup of cilantro, chopped
  • 1 cup of tomatoes, chopped
  • 2 cups of corn, sautéed
  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Preparation

  1. Sauté the corn until lightly cooked or as desired.

  2. Add all of the ingredients to a mixing bowl.

  3. Mix until well combined.
