Tahini Lime Butternut Squash Salad
Ingredients
Dressing
- Juice of 1 lime
- 1 tablespoon tahini
- 1/2 tablespoon liquid aminos
- 1/4 teaspoon garlic powder
Salad
- 3 cups butternut squash, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon liquid aminos
- 1/2 teaspoon liquid smoke
- Salt and pepper to taste
- 3 handfuls baby arugula
- 1/2 cup dill, finely chopped
- 1 avocado, chopped
- 1 cup quinoa, cooked
- 1/2 purple onion, chopped
Preparation
Pre-heat the oven to 300F.
Add the butternut squash to a lined baking sheet.
Bake for 20-30 minutes.
Let the squash cool before adding to the salad.
In a mixing bowl, add all the salad ingredients and mix well.
In a small mixing bowl, mix the salad dressing ingredients until well combined.
Add the dressing to the salad.
