Tahini Lime Butternut Squash Salad

Ingredients

Dressing

  • Juice of 1 lime
  • 1 tablespoon tahini
  • 1/2 tablespoon liquid aminos
  • 1/4 teaspoon garlic powder

Salad

  • 3 cups butternut squash, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon liquid aminos
  • 1/2 teaspoon liquid smoke
  • Salt and pepper to taste
  • 3 handfuls baby arugula
  • 1/2 cup dill, finely chopped
  • 1 avocado, chopped
  • 1 cup quinoa, cooked
  • 1/2 purple onion, chopped

Preparation

  1. Pre-heat the oven to 300F.

  2. Add the butternut squash to a lined baking sheet.

  3. Bake for 20-30 minutes.

  4. Let the squash cool before adding to the salad.

  5. In a mixing bowl, add all the salad ingredients and mix well.

  6. In a small mixing bowl, mix the salad dressing ingredients until well combined.

  7. Add the dressing to the salad.

  8. Enjoy!
