Green Goddess Glow Bowl

Ingredients

Bowl

  • lacinto kale, finely chopped and massaged with lemon and EVOO
  • watercress
  • English cucumber, sliced
  • green pepper, chopped
  • heirloom cherry tomatoes, halved
  • broccoli sprouts
  • edamame
  • pepitas
  • green beans, blanched
  • quinoa, cooked

Dressing

  • 1 avocado
  • 2 lemons, zested and juiced
  • 1 tablespoon tahini
  • 2 teaspoons raw agave or maple syrup
  • 1/2 cup loosely packed fresh parsley
  • 1/4 cup loosely packed fresh cilantro
  • 1/4 fresh jalapeño
  • 1/8 teaspoon salt
  • pepper to taste
  • 1/4 teaspoon garlic powder
  • 1-3 tablespoons water, optional, to thin

Preparation

  1. Cook the quinoa according to package instructions.

  2. Blanch the green beans.

  3. Finely chop the lacinto kale and massage it with lemon and extra virgin olive oil.

  4. Slice the English cucumber, chop the green pepper, and halve the heirloom cherry tomatoes.

  5. Add all prepared bowl ingredients to meal prep containers or serving dishes.

  6. Add all dressing ingredients to a blender and purée until creamy. Add water 1 tablespoon at a time until desired consistency is reached.
