Roasted Butternut Squash Salad with Tahini Dressing

Ingredients

  • 3 cups butternut squash, finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp liquid aminos
  • 1/2 tsp liquid smoke
  • Salt and pepper to taste
  • 3 handfuls baby arugula
  • 1/2 cup dill, finely chopped
  • 1 avocado, chopped
  • 1 cup quinoa, cooked
  • 1/2 purple onion, chopped

Dressing

  • Juice of 1 lime
  • 1 tbs tahini
  • 1/2 tbs liquid aminos
  • 1/4 tsp garlic powder

Preparation

  1. Pre-heat oven to 300F.

  2. Add butternut squash to a lined baking sheet.

  3. Bake for 20-30 minutes.

  4. Let the squash cool before adding to the salad.

  5. In a mixing bowl, add all ingredients and mix well.

  6. In a small mixing bowl, mix salad dressing ingredients until well combined.

  7. Add dressing to salad.

  8. Enjoy!

Notes

  1. This salad is packed with sweetness from the squash and a bright acidity from the tahini dressing.
