Grilled Seasonal Vegetable Salad
Ingredients
- zucchini
- eggplant
- goldbar squash
- asparagus
- peaches
- persian cucumbers
- red cabbage
- greens
- garden tomatoes
- olives
- sunflower seeds
- avocado
- chile flakes
Marinade
- 3 tbsp dijon mustard
- 2 cloves garlic, chopped
- juice of 2 lemons
- 2 tsp extra virgin olive oil
- pinch of salt
- pinch of black pepper
Preparation
Whisk all marinade ingredients in a large bowl until smooth.
Coat the vegetables to be grilled by tossing them in the bowl.
Grill the coated vegetables.
Salad assembly
Combine the grilled vegetables with raw peaches, persian cucumbers, red cabbage, greens, garden tomatoes, olives, sunflower seeds, and avocado.
Dust the salad with chile flakes and serve.
Tips
This marinade is also great for other ingredients and provides a quick flavor boost due to its high acid and salt content.
