Vegan Mushroom Tacos with Salsa Verde

Ingredients

  • 1/2 cup orange juice
  • 6 Tbsp soy sauce
  • 1 Tsp chili paste
  • a handful chopped cilantro
  • 2 Tsp cumin
  • 2 Tsp oregano
  • juice of 2 limes
  • 1/4 cup olive oil
  • 450g mushrooms

Salsa verde

  • a bunch cilantro or parsley
  • 2 cloves garlic
  • 4 Tbsp vegan yogurt
  • 4 Tbsp vegan mayo
  • juice of 1/2 lemon
  • 1 Tsp cumin
  • 1 Tsp agave
  • salt to taste

Preparation

  1. Marinate the mushrooms in the marinade for at least 30 minutes.

  2. Blend the salsa verde ingredients until smooth.

  3. Cook the marinated mushrooms until done.

  4. Serve in soft taco shells with the salsa verde.
