Vegan Lentil Bolognese

Ingredients

  • 3/4 cup red lentils
  • 1 1/2 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp onion granules
  • 1/2 tin chopped tomatoes
  • 1 tbsp tamari
  • 1/2 tbsp maple syrup
  • Juice of 1 lemon
  • Salt and pepper to taste

Preparation

  1. Cook the lentils for around 10-12 minutes, until softened.

  2. Drain and rinse when done.

  3. Meanwhile, heat the olive oil in a pan over a medium heat and cook the onion and garlic for a few minutes, until they start to soften.

  4. Next, add the tomato paste, paprika, cumin, and onion granules.

  5. Cook for 5 minutes, stirring frequently.

  6. Now add the chopped tomatoes, tamari, and maple syrup, cooking for 5 minutes more.

  7. Stir in the lentils together with the lemon juice and season to taste with salt and pepper.

  8. Serve with pasta of your choice.
