Vegan Lentil Bolognese
Ingredients
- 3/4 cup red lentils
- 1 1/2 tbsp olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp onion granules
- 1/2 tin chopped tomatoes
- 1 tbsp tamari
- 1/2 tbsp maple syrup
- Juice of 1 lemon
- Salt and pepper to taste
Preparation
Cook the lentils for around 10-12 minutes, until softened.
Drain and rinse when done.
Meanwhile, heat the olive oil in a pan over a medium heat and cook the onion and garlic for a few minutes, until they start to soften.
Next, add the tomato paste, paprika, cumin, and onion granules.
Cook for 5 minutes, stirring frequently.
Now add the chopped tomatoes, tamari, and maple syrup, cooking for 5 minutes more.
Stir in the lentils together with the lemon juice and season to taste with salt and pepper.
Serve with pasta of your choice.
