Vegan Pulled Jackfruit with Balsamic Onions
Ingredients
- 1 can jackfruit
- 3 shallots
- 2 garlic cloves
- 1-2 red chilies
- 1 tablespoon balsamic vinegar
- 1 tablespoon xylitol or sugar
- 1.5 tablespoons tomato paste
- 2 bay leaves
- 0.5 tablespoon smoked paprika
- 0.5 tablespoon Italian herbs
- 2 teaspoons cumin powder
- 200 ml vegetable stock
- 0.5 tablespoon olive oil
- 1 tablespoon butter
Preparation
Heat 1/2 tablespoon oil in a pan and add onions, xylitol, vinegar and bay leaves. Cook stirring until onions are caramelized.
Add chili, tomato paste and herbs and cook for a minute or so.
Mix in jackfruit and cook with a lid on for 5-7 minutes.
Transfer onto a baking dish, add garlic, pour vegetable stock and cover with tin foil.
Bake in a preheated oven at 180C for 45 minutes, mixing once.
Once soft, mix in vegan butter and pull apart.
For a keto diet, eat in a lettuce boat layered with avocado and vegenaise; otherwise, top on a bun with smashed avocado and vegenaise.
