Vegan Pulled Jackfruit with Balsamic Onions

Ingredients

  • 1 can jackfruit
  • 3 shallots
  • 2 garlic cloves
  • 1-2 red chilies
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon xylitol or sugar
  • 1.5 tablespoons tomato paste
  • 2 bay leaves
  • 0.5 tablespoon smoked paprika
  • 0.5 tablespoon Italian herbs
  • 2 teaspoons cumin powder
  • 200 ml vegetable stock
  • 0.5 tablespoon olive oil
  • 1 tablespoon butter

Preparation

  1. Heat 1/2 tablespoon oil in a pan and add onions, xylitol, vinegar and bay leaves. Cook stirring until onions are caramelized.

  2. Add chili, tomato paste and herbs and cook for a minute or so.

  3. Mix in jackfruit and cook with a lid on for 5-7 minutes.

  4. Transfer onto a baking dish, add garlic, pour vegetable stock and cover with tin foil.

  5. Bake in a preheated oven at 180C for 45 minutes, mixing once.

  6. Once soft, mix in vegan butter and pull apart.

  7. For a keto diet, eat in a lettuce boat layered with avocado and vegenaise; otherwise, top on a bun with smashed avocado and vegenaise.
