Smoky Vegan Jackfruit Tacos with Cilantro and Lime
Ingredients
- 2 cups young jackfruit
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- Juice of 1 lime
- 8 small corn tortillas
- 1/2 cup chopped cilantro
- Lime wedges, for serving
Preparation
Drain and rinse young jackfruit, then shred with a fork
Heat olive oil in a skillet over medium heat
Add diced onion and cook until softened
Stir in minced garlic and cook until fragrant
Add shredded jackfruit, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper
Cook for 10 to 15 minutes until jackfruit is tender, shredding with a fork as it cooks
Stir in lime juice
Warm corn tortillas in a separate skillet
Serve jackfruit mixture in warm tortillas topped with chopped cilantro and lime wedges
