Vegan Jackfruit and Black Bean Enchiladas

Ingredients

  • 2 cups of canned jackfruit, drained and shredded
  • 1 cup of black beans, cooked
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can of diced tomatoes
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 cup of vegan cheese, shredded
  • Fresh cilantro, for garnish

Preparation

  1. Sauté the onion, garlic, and bell pepper until softened.

  2. Add the shredded jackfruit, black beans, diced tomatoes, chili powder, cumin, paprika, salt, and pepper, and cook until heated through.

  3. Fill each tortilla with the mixture, roll up, and place in a baking dish.

  4. Top with shredded vegan cheese.

  5. Bake in the oven until the cheese is melted and bubbly.

  6. Garnish with fresh cilantro before serving.
