Crispy Baked Jackfruit Tacos
Ingredients
- 2 cans 20 oz young green jackfruit in brine
- 1 Tbsp creamy natural peanut butter
- 1 tsp garlic powder
- 2 tsp paprika
- 2 tsp cumin
- 1 tsp salt
- 1 tsp chili powder
- 1 yellow onion
Optional additions
- 15 oz drained black beans
Preparation
Preheat oven to 425°F.
Drain and rinse the jackfruit.
Place the jackfruit on a clean kitchen towel and press down to remove excess water and crush it.
Transfer the jackfruit to a bowl and mix with the spices.
Add the peanut butter and mix until combined.
Mix in the onion slices.
Pour the seasoned jackfruit mixture onto a parchment-lined baking sheet and spread it into a thin layer.
Bake for 15 minutes.
Flip the mixture and bake for another 10 minutes.
Broil for 5 minutes to achieve crispness.
Optionally, add drained black beans for additional protein.
Serve the baked jackfruit mixture in taco shells or tortillas.
Tips
Use a lime taco holder for better presentation.
Top with cashew queso if available for extra flavor.
