Sweet Potato Black Bean Burgers

Ingredients

  • 1 medium cooked sweet potato (about 1/2 cup)
  • 1 15-ounce can black beans
  • 1/2 cup gluten-free rolled oats
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon chipotle powder (optional)
  • 1 teaspoon garlic powder
  • 1/4 cup diced red onion
  • Salt to taste

Preparation

  1. Mix the sweet potato and black beans in a bowl and mash with a fork or potato masher

  2. Add in everything else and mix

  3. Form about 8 patties and pack them well

  4. Heat a skillet over low medium heat

  5. Add olive oil

  6. Cook for about 5-7 minutes on each side

Tips

  1. The quickest way to cook a sweet potato is to microwave it

  2. You can use multiple pans to cook all patties at once

  3. Store in the fridge for up to a week or freeze for up to 3 months
