Sweet Potato Bean Burger
Ingredients
- 1 cup black beans
- 1 cup sweet potato
- 1/2 cup rolled oats
- 1.5 cups chopped yellow onion
- 1/4 cup fresh chopped parsley
- 1 tsp cumin
- 1 tsp garlic
- 1 tsp chili powder
- 1 tsp olive oil
- 1/2 tsp salt
- 1/8 tsp black pepper
Preparation
Cook the sweet potato by microwaving, baking, or boiling it.
Blend 1/2 cup of rolled oats in a blender to make oat flour.
Add oil to a pan and sauté 1.5 cups of chopped onion until it starts to brown on medium heat.
Mash the black beans in a bowl until most are mashed, then add the cooked sweet potato, the oat flour, the sautéed onion, and all other remaining ingredients to the bowl.
Mix everything together, form the mixture into balls, and flatten them into patties.
Bake the patties in an air fryer or oven at 360°F for 10-15 minutes, making sure to check on them.
Tips
Adding more oat flour will make the burger firmer.
You can cook the burger in a non-stick pan; if using a regular pan, add oil or vegan butter to prevent sticking.
Add cayenne pepper for a spicier version.
You can use raw chopped onion instead of sautéed; sautéing adds sweetness.
