Easy Sweet Potato Burgers
Ingredients
- 2 cups (500g) mashed sweet potato (~2 large sweet potatoes)
- 1 – 1 1/2 cups (200-300g) cooked brown rice (or quinoa)
- 1 cup (170g) cooked black beans
- 1/2 cup (35g) finely diced green onion
- 1/2 cup (50g) ground walnuts
- 2 1/2 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp each salt and pepper (to taste)
- 1/4 tsp chili powder
Preparation
Cut sweet potatoes in half and bake until soft, about 30 minutes.
While potatoes are baking, cook rice or quinoa.
Add black beans to a mixing bowl and mash half of them. Then add sweet potato and lightly mash, then 1 cup rice, green onion, walnuts and spices. Mix to combine. Taste and adjust seasonings as needed. Add more rice or nut meal if the mixture feels too wet. It should be very moist but moldable.
Form burgers, yielding about 6 patties.
Bake burgers for a total of 30-45 minutes, carefully flipping after 20 minutes to ensure even cooking. The longer you bake them, the firmer and drier they will get, according to preference.
Serve on buns or atop a salad with mashed avocado, tomato, red onion, greens, and ketchup or salsa.
Tips
You can microwave the sweet potatoes to save time, but avoid frying as baking helps them dry and firm up.
