Sweet Potato Chickpea Sheet Pan

Ingredients

  • 1, 15oz can chickpeas, rinsed and drained
  • 1 medium sweet potato, chopped into small cubes ( 1/2 inch thick)
  • 1 head of broccoli, chopped into small ping pong sized florets
  • 1/2 medium red onion, sliced thin
  • 1 tsp smoked paprika
  • 1/2 tsp fennel seed
  • 1/2 tsp dry thyme
  • 1/2 tsp dry basil
  • 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and Pepper to taste
  • 1-2 tbsp olive oil
  • Handful of fresh minced parsley and cilantro

Preparation

  1. Set the oven to 400°F.

  2. Dry off the chickpeas using a clean kitchen towel and lightly rub them to remove any loose skins.

  3. Add the chickpeas, sweet potato, broccoli, and red onion to a sheet pan.

  4. Add the herbs and spices over the top.

  5. Drizzle with olive oil and toss everything together with your hands, then spread out on the sheet pan.

  6. Bake in the oven for 25-30 minutes.

  7. Toss fresh minced parsley and cilantro on top and mix together.

Serving suggestions

  1. Serve in a wrap or in a bowl with rice and hummus.
