Cauliflower Nachos Tray Bake

Ingredients

  • 1 head of cauliflower, chopped into small florets
  • 1 tbsp of fajita or taco spice mix
  • 1 tbsp of olive oil for roasting
  • 1/2 can (400g) of black beans, drained and rinsed
  • 1/2 avocado, sliced or chopped into chunks
  • 200g of tomatoes, diced
  • 1/2 red onion, finely chopped
  • A bunch of coriander, chopped
  • Salt and pepper to taste

Cheese sauce

  • 1 cup of peeled and cooked white potatoes
  • 1/2 cup of chopped cooked carrots
  • 2 tablespoons of raw cashews, soaked in water for at least 3 hours
  • 3 tablespoons of nutritional yeast
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/4 cup of unsweetened almond or soy milk
  • 2 tablespoon of lemon juice
  • 1/2 teaspoon of yellow mustard
  • Salt and pepper to taste

Preparation

  1. Blend all the cheese sauce ingredients together until creamy and smooth, then let it cool down slightly.

  2. Add the cauliflower to a large baking tray, sprinkle with fajita spice mix, olive oil, salt, and pepper, and roast in the oven for 25 minutes until soft.

  3. In a bowl, combine the chopped tomatoes, red onion, and coriander, season with a pinch of salt, and mix together.

  4. Remove the cauliflower from the oven, add the drained black beans, the tomato and onion mixture, and chopped avocado to the tray, then drizzle generously with the cheese sauce and serve.
