Cauliflower Nachos Tray Bake
Ingredients
- 1 head cauliflower, chopped into small florets
- 1 tbsp fajita or taco spice mix
- 1 tbsp olive oil for roasting
- 1/2 can black beans (400g), drained and rinsed
- 1/2 avocado, sliced or chopped
- 200g tomatoes, diced
- 1/2 red onion, finely chopped
- A bunch coriander, chopped
- Salt and pepper to taste
Cheese sauce
- 1 cup peeled and cooked white potatoes
- 1/2 cup chopped cooked carrots
- 2 tablespoons raw cashews, soaked in water for at least 3 hours
- 3 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 cup unsweetened almond or soy milk
- 2 tablespoon lemon juice
- 1/2 teaspoon yellow mustard
- Salt and pepper to taste
Preparation
Cheese sauce
Blend all cheese sauce ingredients together until creamy and smooth. Let it cool down slightly.
Main
Add the cauliflower to a large baking tray, sprinkle with fajita spice mix, olive oil, salt and pepper, and roast in the oven for 25 minutes until soft.
In a bowl, mix the chopped tomatoes, red onion, and coriander, and season with a pinch of salt.
Remove the cauliflower from the oven, add the drained black beans, tomato and onion mixture, and chopped avocado to the tray, then drizzle generously with the cheese sauce.
