Oil-Free Sticky Sesame Cauliflower

Ingredients

Batter

  • 1 small-medium cauliflower (about 3 cups florets)
  • 3/4 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened non-dairy milk

Sauce

  • 1 large garlic clove
  • 1/4 cup apricot fruit jam (or similar flavor)
  • 2 tablespoons soy sauce or tamari

Optional toppings

  • toasted sesame seeds

Preparation

  1. Cut the cauliflower into bite-size florets.

  2. In a large bowl, whisk together the flour, garlic powder, and salt.

  3. Slowly add the non-dairy milk while stirring to make a batter.

  4. Add the cauliflower florets to the batter and mix to coat.

  5. Transfer the coated cauliflower to a lined baking sheet.

  6. Bake at 450°F for about 20 minutes or until starting to turn golden.

  7. Broil for an additional 2-3 minutes for extra crispness.

  8. Meanwhile, make the sauce by mixing the minced garlic, apricot fruit jam, and soy sauce or tamari.

  9. Heat the sauce in a small-medium skillet.

  10. Add the baked cauliflower to the sauce and gently mix until coated and warmed through, about 2-3 minutes.

  11. Serve immediately, topped with toasted sesame seeds.
