Oil-Free Sticky Sesame Cauliflower
Ingredients
- 1 small-medium cauliflower, about 3 cups bite-size florets
Batter
- 3/4 cup all-purpose flour
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 3/4 cup unsweetened non-dairy milk
Sauce
- 1 large garlic clove, minced
- 1/4 cup apricot fruit jam (or similar flavor)
- 2 tablespoons soy sauce or tamari
Garnish
- Toasted sesame seeds
Preparation
Cut the cauliflower into bite-size florets, about 3 cups.
In a large bowl, whisk together 3/4 cup all-purpose flour, 2 teaspoons garlic powder, and 1/2 teaspoon salt.
Slowly add 3/4 cup unsweetened non-dairy milk while stirring, then add the cauliflower florets and mix to coat.
Transfer the coated cauliflower to a lined baking sheet.
Bake at 450°F for about 20 minutes, or until starting to turn golden, then broil for an additional 2-3 minutes for extra crisp.
Meanwhile, make the sauce by mixing 1 large minced garlic clove, 1/4 cup apricot fruit jam, and 2 tablespoons soy sauce or tamari, then heat in a small-medium skillet.
Add the baked cauliflower to the sauce and continue heating while gently mixing until coated and warmed through, about 2-3 minutes.
Serve immediately, topped with toasted sesame seeds.
