Sticky Sesame Cauliflower Oil-Free

Ingredients

  • 1 small-medium cauliflower (about 3 cups florets)
  • 3/4 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened non-dairy milk
  • 1 large garlic clove
  • 1/4 cup apricot fruit jam (or similar flavor, 100% fruit)
  • 2 tablespoons soy sauce or tamari
  • toasted sesame seeds (for topping)

Preparation

  1. Cut the cauliflower into bite-size florets.

  2. In a large bowl, whisk together the flour, garlic powder, and salt.

  3. Slowly add the unsweetened non-dairy milk while stirring to make the batter.

  4. Add the cauliflower florets to the batter and mix to coat.

  5. Transfer the coated cauliflower to a lined baking sheet.

  6. Bake at 450°F for about 20 minutes or until they start to turn golden.

  7. Broil for an additional 2-3 minutes to crisp.

  8. Meanwhile, mix the minced garlic, apricot fruit jam, and soy sauce or tamari to make the sauce.

  9. Heat the sauce in a small-medium skillet.

  10. Add the baked cauliflower to the sauce and heat while gently mixing until coated and warmed through, about 2-3 minutes.

  11. Serve immediately and top with toasted sesame seeds.
