Sticky Sesame Cauliflower Oil-Free
Ingredients
- 1 small-medium cauliflower (about 3 cups florets)
- 3/4 cup all-purpose flour
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 3/4 cup unsweetened non-dairy milk
- 1 large garlic clove
- 1/4 cup apricot fruit jam (or similar flavor, 100% fruit)
- 2 tablespoons soy sauce or tamari
- toasted sesame seeds (for topping)
Preparation
Cut the cauliflower into bite-size florets.
In a large bowl, whisk together the flour, garlic powder, and salt.
Slowly add the unsweetened non-dairy milk while stirring to make the batter.
Add the cauliflower florets to the batter and mix to coat.
Transfer the coated cauliflower to a lined baking sheet.
Bake at 450°F for about 20 minutes or until they start to turn golden.
Broil for an additional 2-3 minutes to crisp.
Meanwhile, mix the minced garlic, apricot fruit jam, and soy sauce or tamari to make the sauce.
Heat the sauce in a small-medium skillet.
Add the baked cauliflower to the sauce and heat while gently mixing until coated and warmed through, about 2-3 minutes.
Serve immediately and top with toasted sesame seeds.
