Oven-Baked Potatoes with Veggies and Cheese

Ingredients

  • 3 medium baked potatoes
  • 100g zucchini
  • 100g mushrooms
  • 100g vegan cheese
  • 3 tablespoons plant butter
  • salt and pepper

Sauce

  • Honey and mustard sauce

Preparation

  1. Turn on the oven to 200°C (390°F) with hot air.

  2. Cut the potatoes in half, drizzle with olive oil, salt, and pepper, place on a baking tray, and bake for 45 minutes.

  3. Wash the zucchini and shred it. Wash and chop the mushrooms into small slices.

  4. Add the zucchini, mushrooms, butter, and cheese on top of the potatoes. Drizzle with salt and pepper, then bake for another 10 minutes.

  5. Serve the baked potatoes directly from the oven and top with warm honey and mustard sauce or your favorite sauce.
