Creamy Parmesan Potato and Asparagus Pizza
Ingredients
- Ready-made pizza dough
- 2 golden potatoes with skin, sliced
- 1/2 cup asparagus, sliced
- 1 slice red onion, sliced into quarters
- 1/3 cup raw cashews
- 1/3 cup plant milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/3 cup vegan parmesan
- 1/4 cup nutritional yeast
- Olive oil for drizzling
- Salt and pepper to taste
Preparation
Soak the cashews in enough hot water to cover for at least 30 minutes.
While the cashews are soaking, parboil the sliced potatoes and asparagus for 3 minutes and pat dry.
In a high-speed blender, combine the drained and rinsed cashews, nutritional yeast, vegan parmesan, plant milk, garlic powder, onion powder, salt, and pepper, and blend until thick and creamy without any lumps.
Spread the creamy parmesan sauce onto the pizza dough.
Arrange the parboiled potato, asparagus, and onion slices onto the dough and drizzle with olive oil.
Bake the pizza for 22 to 25 minutes at 425 degrees Fahrenheit or until lightly browned.
Notes
This is a vegan take on a white pizza.
Use organic frozen or refrigerated ready-made pizza dough for convenience.
