Sheet Pan Tofu and Asparagus with Lemon
Ingredients
- 1 block tofu (450g)
- 1 bunch asparagus
- 2 tsp olive oil
- 1 1/2 tbsp soy sauce
- 1 tsp onion powder
- 1 tsp garlic powder or 2-3 cloves fresh garlic
- 1 tbsp nutritional yeast
- Few cracks of white peppercorn
- Salt to taste
- Juice and zest from a fresh lemon
Preparation
Press and drain the tofu, then cut into cubes and cut asparagus into chunks.
Set oven to 400F.
In a bowl, add the tofu and soy sauce and coat well.
Place the tofu and asparagus on a lined baking sheet.
Toss both with olive oil.
Sprinkle on seasonings and toss to coat evenly.
Place the sheet pan in the oven and bake for 15 minutes or longer if desired.
Remove from oven and squeeze over lemon juice and add lemon zest to taste.
Serving suggestions
Pair with rice, pinto beans mixed with BBQ sauce, romaine, tomatoes, and tahini sauce.
