Gluten-Free Baked Tofu Chicken Fingers

Ingredients

  • 1 12 ounce package of tofu
  • 1/4 cup almond milk
  • 1/4 cup tapioca flour

Breading mixture

  • 3/4 cup almond flour
  • 1/4 cup nutritional yeast
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic
  • 1/4 teaspoon salt

Buffalo topping

  • 1 cup buffalo sauce

Preparation

  1. Press the tofu and cut into 8 strips.

  2. In a shallow bowl, add the tapioca flour.

  3. In another shallow bowl, add the almond milk.

  4. Mix together the breading mixture in a bowl.

  5. Dip each tofu strip in the tapioca flour, then the almond milk, and then the breading mixture.

  6. Place the breaded tofu strips on a greased baking sheet.

  7. Bake at 425°F for 40 minutes.

  8. Remove from the oven, let cool slightly, and brush with the buffalo sauce.

Serving suggestion
