Spicy Baked Buffalo Mac and Cheese

Ingredients

  • 6 cups shells (of choice)

For the Buffalo Cheese Sauce

  • 1 1/2 cups cashews
  • 2 cups almond milk
  • 3/4 cup nutritional yeast
  • 1 cup buffalo sauce
  • 3 tsp garlic
  • 2 tsp paprika
  • Sprinkle of salt

For the Topping

  • 1 1/2 cups almond flour
  • 2 tbsp nutritional yeast
  • 1 tsp paprika
  • 1 1/2 tsp garlic
  • 1 tsp sea salt

Preparation

  1. Soak the cashews for at least 4 hours.

  2. In a blender, combine the soaked cashews with all the sauce ingredients. Blend until smooth.

  3. Cook the pasta according to package instructions.

  4. In a bowl, mix together the topping ingredients.

  5. Grease a large casserole dish.

  6. Add the cooked pasta to the casserole dish. Pour the sauce over the pasta and mix well.

  7. Sprinkle the prepared topping over the pasta.

  8. Bake in a preheated oven at 400°F (200°C) for 20 minutes.

  9. Remove from the oven, let it cool slightly, and enjoy!
