Cauliflower Nachos Tray Bake
Ingredients
- 1 head of cauliflower, chopped into small florets
- 1 tablespoon of fajita or taco spice mix
- 1 tablespoon of olive oil for roasting
- 1/2 can (400g) of black beans, drained and rinsed
- 1/2 avocado, sliced or chopped into chunks
- 200g of tomatoes, diced
- 1/2 red onion, finely chopped
- A bunch of coriander, chopped
- Salt and pepper to taste
Cheese sauce
- 1 cup of peeled and cooked white potatoes
- 1/2 cup of chopped cooked carrots
- 2 tablespoons of raw cashews, soaked in water for at least 3 hours
- 3 tablespoons of nutritional yeast
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/4 cup of unsweetened almond or soy milk
- 2 tablespoons of lemon juice
- 1/2 teaspoon of yellow mustard
- Salt and pepper to taste
Preparation
To make the cheese sauce, blend all cheese sauce ingredients together until creamy and smooth; let it cool down slightly.
Add the cauliflower to a large baking tray, sprinkle with the fajita spice mix, olive oil, salt and pepper; roast in the oven for 25 minutes until soft.
In a bowl, add the chopped tomatoes, red onion and coriander, season with a pinch of salt and mix together.
Remove the cauliflower from the oven and to the same tray add the drained beans, tomato and onion mixture, chopped avocado and drizzle generously with the cheese sauce.
